Bulgur Salad

1 tbsp CBD oil or as prescribed

¾ cup Italian parsley, chopped 

¼ cup mint, chopped 

1½ tsp salt 

1½ cups ripe tomatoes, diced & seeded 

¾ cup scallions, minced 

1 1/3 cups boiling water 

¾ cup dry bulgur wheat 

5 tbsp lemon juice 

3 tbsp extra-virgin olive oil 

2 tsp garlic, minced 

Ground black pepper to taste 


Mix the boiling water, bulgur, and salt in a large bowl. Cover and set aside for 15 minutes until the bulgur turns soft and the water is absorbed. 

Mix in the tomatoes, scallions, parsley, mint, lemon juice, olive oil, CBD oil, and garlic. Toss well, then season with ground black pepper taste. Serve.
